Matcha Oat cookies 12-15 cookies

Here's a simple and delicious oat cookie recipe using 70 grams of oats. These cookies are perfect for a quick snack or a sweet treat!

Ingredients:

  • 70 g (0.875 cups) Any The Earthy Dried Mix
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • 1/4 cup Matcha Spread (adjust the amount if the consistency is too runny)
  • 1/4 cup brown sugar, packed
  • 2 tablespoons granulated sugar or Honey
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 1/4 cup raisins or chocolate chips (optional)
  • 1/4 cup chopped nuts (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 175C and line a baking sheet with parchment paper.
  2. Mix Dry Ingredients:
    • Combine the oats, flour, baking soda, cinnamon, and salt in a medium bowl. Mix well and set aside.
  3. Cream Matcha Spread and Sugars:
    • Mix the matcha spread, brown sugar, and granulated sugar in a large bowl until well combined. If the matcha spread is too runny, you may need to adjust the quantity or add more flour to achieve the right consistency.
  4. Add Wet Ingredients:
    • Beat in the egg and vanilla extract until well combined.
  5. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  6. Add Optional Mix-ins:
    • If desired, fold in the raisins, chocolate chips, or chopped nuts.
  7. Scoop the Dough:
    • Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake:
    • Bake in the oven for 10-12 minutes, or until the edges are golden brown but the centres are still slightly soft.
  9. Cool:
    • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Tips:

  • Consistency Check: If your matcha spread is very runny, you might need to reduce the amount slightly or add more flour to ensure the cookie dough has the right consistency.
  • Flavour Balance: Matcha has a distinct flavour, so taste the dough and adjust the sweetness if needed, as the spread might already contain some sweeteners
Enjoy your delicious oat cookies with a hint of matcha flavour with a glass of milk or tea!
