Christmas Spice Coconut Rice Pudding

I don't normally eat much rice but this has made me eat so much rice!!
It is a rich, creamy rice pudding infused with Christmas flavour and a hint of coconut which is just heavenly!! It’s a straightforward, effortless recipe that’s the perfect cosy breakfast for cold winter mornings.

- Leftover rice 1 1/2 cup 
- Milk 2 cup 
- Egg 1
- Rasins 50g 
- Ginger powder 1/2 tsp + Cinnamon powder 1/2 tsp + Nutmeg powder 1/2 tsp + - Clove powder 1/2 tsp 
- Honey 1 tbsp 
- Coconut oil 1 tbsp
- Salt 1/4 tsp
- Vanilla 1/2 tsp
Cook the rice with 1 1/2 cup of milk until boiling and add another 1/2 cup of milk.
Add the egg and quickly stir through the mixture so they are evenly combined.
Turn to low heat and add the rest ingredients.
Remove the pot from the heat and let it cool down before serving.
Serve it with some coconut flakes and extra spice on the top.
